Roasted butternut squash with garlic & chilli

Easy-peasy delish side-dish.


⦁ olive oil – a couple tbsps or a few good glugs
⦁ butternut squash – peeled, deseeded & cut into small chunks (reserve the seeds for garnish)
⦁ garlic, 1 head, peeled and separated into cloves
⦁ 2 chillies, diced
⦁ salt & pepper


Toss all ingredients together in a roasting tin with oil. Roast at 220 C for ~35 minutes, or until tender. Turn half way through cooking time. Garnish with toasted seeds.
