Parsnip Cake

Continuing on the theme of veg cake, here we are, as promised, parsnip cake II.

PSI – I also shamelessly stole this recipe. Making up the baking isn’t my forte. (However shaking up the baking is: I definitely upped the spice content in this one!)

Ingredients

⦁ butter – 175g
⦁ demerara sugar – 250g
⦁ maple syrup – 100mL
⦁ eggs – 3
⦁ self-raising flour – 250g
⦁ baking powder – 2 tsp
⦁ mixed spice – 3.5 tsp + a bit of extra ground ginger + nutmeg
⦁ Parsnips – 250g, peeled & grated
⦁ apple – 1 apple peeled, cored, grated
⦁ pecans – 50g, roughly chopped
⦁ zest & juice of 1 small orange
⦁ icing sugar, to serve (I skipped this as I didn’t have any, and was impatient for cake)
