Ingredients
- ¼ – 1/3 each red, green, white cabbage, shredded
- 3-4 medium sized carrots, roughly grated
- onion, finely chopped
- mayonnaise, ~ ½ cup
- Greek yogurt or crème fraîche, ~ ½ cup
- squeeze fresh lemon
- salt & pepper
- 1 apple, grated or finely cut in matchsticks (optional)
Directions
Combine all ingredients in a bowl; mix well. Season to taste. Chill for 1 hour before serving.
An excellent accompaniment to your favourite veggie burger or pulled pork 🙂
